ACITO’s Cafe in Hawks Nest has been the focus of a segment filmed by ABC’s Landline.
The cafe was selected over a Sydney restaurant for the project.
Camera crews descended on the cafe over the weekend to film chef Erin Strickland cooking up the Commonwealth Scientific and Industrial Research Organisation (CSIRO) super yabby.
The new breed of yabby has been developed to grow 30 per cent faster than the average yabby and will mean yabbies can be on the menu all year round.
Yabbies grow slowly and they must be a few years old before they are the right size to cook.
Local yabby supplier Stewart Hole organised the filming at Acito’s.
“We were told it may happen and then it all happened really fast,” owner Kowan Wood said.
With the menu at Acito’s changing every fortnight, Mr Wood said they always try and keep yabby as one of the dishes.
This fortnight it is a yabbies angalotti entree. Mr Wood and his mother Lynne Wood teamed up with chef Erin Strickland and took over the cafe in February this year.
The segment will feature on Landline later in the year.
